Cooking at the table attracts visitor interest at Publican Live!
Bringing a spot of theatre to Publican Live! is Black Rock Grill, which continues to attract interest from pubs looking to increase their food revenue.
The Black Rock method allows customers to cook their own food on a slab of volcanic rock, heated in an oven and bought to the table.
The heat seals in the natural juices and flavour and the rock stays hot at the table for at least an hour, allowing a large helping of steak and swordfish, for example, to be cooked chunk-by-chunk.
Black Rock director Peter Hatter said: “The system is now better known than it was a year ago when we launched, and so our stand has been very busy. As soon as the doors opened on the first morning we had a couple come straight over - they’d read about Black Rock in The Publican and wanted to see it for themselves.”
