Cook the best Italian pizza on a baking stone

A recipe using the Black Rock Grill Baking Stone

Instructions

A pizza stone absorbs heat to deliver a perfectly crispy base every time, while serving as a fantastic hot platter at the table. Follow these steps to make your own delicious homemade stone-baked pizza:

  1. Activate the yeast: In a jug, combine lukewarm water and sugar. Once dissolved, sprinkle the yeast over the top and leave to rest for 5–10 minutes until frothy.
  2. Prep dry ingredients: Sieve the flour and salt into your food mixer bowl (fitted with a dough hook). Add two tablespoons of olive oil.
  3. Knead the dough: Turn the mixer on low speed and gradually pour in the liquid yeast mix. Knead on a slow-to-medium setting for 6–7 minutes until smooth and elastic.
  4. First prove: Coat a large bowl with a splash of olive oil, place the dough ball inside, and cover tightly with cling film. Leave in a warm spot for about 1 hour until doubled in size.
  5. Preheat stone & oven: While the dough is rising, place your pizza stone into the oven and preheat to its highest setting (220°C–250°C / Gas Mark 7–9) for at least 30–45 minutes so the stone gets searingly hot.
  6. Knock back: Once risen, remove the dough from the bowl and gently knead it on a floured surface to push out the air bubbles (knocking back).
  7. Shape the base: Roll or stretch the dough out on a lightly floured surface or baking paper to create your pizza base.
  8. Add toppings: Spread a thin layer of tomato sauce over the base, followed by mozzarella and your favourite pizza toppings.
  9. Bake: Carefully transfer the prepped pizza onto the preheated stone in the oven. Bake for 8–10 minutes until the crust is golden and the cheese is bubbling.
  10. Serve safely: Using our Heat-Resistant Gloves, carefully remove the hot pizza stone from the oven and place it directly into its dedicated metal wire rest.
